Like I said before Im not a huge apple dessert fan but what I do love is fried apples and cookies and when I found a recipe that put the two together I had to try it. I found the recipe in an old cookbook that was given to me by my mother-in-law and was put together by our small country village. The cookbook is one of my favorites. It is packed full of local residents’ favorite family recipes. I love our little small county town and being able to share recipes with others in the village is so nice. I made some modifications to this recipe and it was hit with my family.
Keep in mind this I’m not a baker and this blog and recipes are meant to be just a guide. Feel free to tweak it to your own desire.
I used Honeycrisp I got at the Mennonite store which was almost out of season that needed to be used up. I love cooking seasonally and especially stocking up on a good bargain!
6-8 Apples
1 Cup of Sugar
1 teaspoon of apple pie spice
Skin and slice into wedges place in a skillet on medium heat to soften.
1 stick (½ cup) salted butter softened to room temperature
1 cup sugar
2 large egg
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking powder
2 teaspoon ground cinnamon
Spread dough into a 9×16 greased pan ( I used a larger baking dish so I double the recipe in the video) Top with fried apple and bake for 20-30 min at 350*. Once cooled I topped it with the leftover juice from the fried apple a little cream and powdered sugar.
