Canning Cranberry Juice

As Autumn breaks into winter join us in the cottage kitchen as we preserve cranberries to enjoy all year long. Today we are making shelf-stable cranberry juice. This is perfect to have on hand for a sweet treat a gift for a loved one or to even help elevate a urinary tract infection.

Step 1: Sourcing Quality Cranberries: Keep your eye on the sale ads this holiday season. Fresh cranberries can be sourced for under $1 per bag!

Step 2: Assembling Your Canning Supplies: YOu will not need a pressure canner for this recipe and you need is mason jar (pints or quarts) and a water bath or large pot with a rack that can be placed in the bottom.

Step 3: Our cranberry juice recipe is a testament to simplicity and the celebration of natural flavors. Combine your fresh cranberries with pure cane sugar and water to create a simple but tasty juice that can be used in cocktails, or consumed plain.

Wooded White Cottage Cranberry Juice Recipe for pints (double for quarts):

Ingredients:

  • Fresh cranberries
  • sugar
  • water

Instructions:

  1. Rinse the cranberries thoroughly and set aside.
  2. Sanitize your jars and lids
  3. Add 3/4 cup cranberries to each jar
  4. Add 1/4 cup sugar to each jar
  5. Add boiling water over top of cranberries and sugar allowing 1/2in headspace and the top of jar
  6. Place lid on jar a tighten ring fingertip tight
  7. Place jars in water bath canner and bring to a boil of 25 mins
  8. Let cool in canner for 10 mins before removing
  9. Place jars on the counter on a towel to rest for 24 hours
  10. Test that jars are sealed properly by removing rings and picking the jar up by lid only ( the lid should stay on the jar and the center of the lid should be flattened down and unable to bend.

Add to a basket with a loaf of sourdough and homemade jam for a lovely homemade gift.

Pair the jar with a recipe for your favorite cocktail and the accompanying ingredients.

Add a cute label and give a 4 pack of jars to a family for a sweet treat.

Fill a basket with muffins croissants and assorted butter add a jar of your cranberry juice for a lovely breakfast basket.
