Sourdough Raspberry Muffins

Since I started on the journey of all things sourdough I have been experimenting with all sorts of recipes and this one has landed in the ” Keep FOREVER” pile! My family inhaled them! I have made several batches to freeze for our upcoming family vacation too. You can use any fruit! I Have tried both apples and raspberries and each is delightful!

Sourdough Raspberry Muffins

Muffin Ingredients:

2 cups all-purpose flour

1 cup granulated sugar

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 tablespoon cornstarch

zest half a lemon

Juice from half a lemon

1 cups raspberries (fresh or frozen)

8 tablespoons  butter (melted)

2 large eggs

½ cup sourdough starter discard

1/2 cup of yogurt

1/2 cup of milk ( if too thick add a bit more)

1 teaspoon vanilla extract

Crumb Topping:

3 tablespoons butter ( melted)

½ cup granulated sugar

½ cup all-purpose flour

Directions:

Mix all dry ingredients then incorporated all wet ingredients.

Place batter in a lined cupcake pan

Place crumb topping on top of muffins

Bake at 350* for about 30 mins
